Evidence is not a synonym for proof. The gospels are certainly evidence for the existence of Jesus. What they are not is proof. Not at all unusual for ancient figures.
Imo the best that may be claimed is that it is likely there was such a man in first century Judea . A wandering rabbi called something like Yeshua bar Yusuf. That he may have founded a small Jewish sect and may have been crucified by the Romans for sedition. Anything more than that is myth .
There is little doubt in my mind that the Torah is the mythology of Judaism. That the New Testament is the mythology of Christianity. Any claims of truth for these myths is unfalsifiable
